For our inaugural edition, we’re putting the spotlight on the classic martini. Federico Balzarini of the ARGO shares his recommendations on where to get the best martini in Hong Kong.
Ah, the classic martini. It’s a cocktail made with gin and vermouth often garnished with an olive or a lemon. It’s one of the best-known alcoholic beverages. Its base spirit is simple. Over the years, however, different variations have popped up to tickle the fancy of many Hong Kong drinkers. So, if you’re looking for the classic type or an elevated version, we’ve got you covered. We sought the help of Federico Balzarini, the beverage manager at ARGO for a list of top bars for martini in Hong Kong. Living by the motto, “A great cocktail without a great experience is just a cocktail,” Federico certainly has an impressive portfolio under his belt.
At 17 years old, he started working at a local bar in his hometown of Lake Garda in Northern Italy. It was where he found his calling and fell in love at first sight with cocktail making. He officially began his bartending career in another local cocktail bar and spent the next few years perfecting the basics of classic cocktails. Then, he moved to London to further his craft until he found his way to the American Bar at The Savoy. There, he worked with industry icons like Lorenzo Antinori, who’ll pass him the baton at ARGO. Eventually, he arrived in Bangkok in 2021 to join Vesper before making his way to Hong Kong to lead ARGO.

Federico’s first recommendation is his own creation at ARGO. The modern cocktail bar at Four Seasons Hotel Hong Kong celebrates the world of fine drinking. Its name takes inspiration from the ship of Jason, a hero on a quest for the Golden Fleece. Just like the Greek myth, ARGO invites its customers on a journey of discovery and exploration through its drinks. Upon first glance, the stunning neo-classical-style centre stage will leave anyone in awe. The bar is designed after a conservatory and boasts stunning views of Victoria Harbour. ARGO secured its place among the best of the best, taking the 58th spot at The World’s Best Bars 2024 and 9th place in Asia.

The drink: 50/50 Martini
Federico’s next recommendation is from The Diplomat, the first speakeasy concept by fellow mixologist John Nugent. This American-style cocktail bar prides itself on its reimagined cocktails. It lures drinkers to celebrate the high energy of Hong Kong and offers a relaxing atmosphere of a classic neighbourhood bar. Since its launch in 2020, which may be a rocky start for many given the pandemic, The Diplomat came in hot and took the 20th spot in Asia’s Best Bars the following year. The moody, cosy 18-seater bar feels classy all at once on top of an affordable drinks and food menu.
“The Diplomat’s 50/50 Martini puts a unique spin on the classic cocktail. The equal mix of gin and dry vermouth creates a balanced flavour that really highlights the botanicals in the gin. It’s a lighthearted drink to enjoy with their burger.”

Federico is also impressed by Bar Leone’s martini. Shortly after celebrating its first anniversary, Bar Leone secured the top position in Asia’s 50 Best Bars list. Led by Lorenzo Antinori, whose former stomping bar is ARGO, Bar Leone is a “people’s neighbourhood bar”. Right down from its offering, guided by the philosophy of “cocktail popolari,” which means “cocktails for the people,” highlights simplicity at its finest. Lorenzo drew inspiration from traditional Roman bars to create a relaxed and fun hang-out spot that anyone can keep coming back to.
