Master Butcher Dario Cecchini Bottega di Carna returns to Singapore with Exclusive Gastronomy Experiences
Eighth-generation butcher and Bottega di Carna creator Dario Cecchini will return to Singapore this November, bringing exclusive meat cuts from Spain’s esteemed Viñals Soler farms. Experience the artistry of Chef Dario’s butchery through a series of limited-run curated events at Bottega di Carna and an off-site food truck pop-up with local establishment Ye Olde Cow.
Bottega di Carna will also refresh its dine-in á la carte menu featuring Viñals Soler’s cuts. Highlights include the Signature Beef Tartare, Fiorentina T-Bone Bistecca, Italian tortellini with a “Dario-twist”, and Lobster Fettucine.
Bottega di Carna x Ye Olde Cow Food Truck Pop-Up
Burger buffs, prepare your stomachs. A special food truck pop-up by Bottega di Carna and homegrown burger joint Ye Olde Cow will serve a one-of-a-kind double patty burger for two days only during lunch hours. Known for their 35-day dry-aged smashed beef burgers, Ye Olde Cow will utilise its signature recipe to pair with Dario’s patty made from Viñals Soler beef (S$15) for this exclusive burger.
Diners can also enjoy Dario’s Carpaccio di Culo (S$12) crafted with the same specialty cuts, paired with refreshing options of Peroni draught beer (S$13) or Ye Olde Cow’s cold-pressed lemonade (S$4).
Bottega di Carna x Ye Olde Cow Food Truck Pop-Up happens on 21 and 22 November at Lyf One-North from 12pm to 2pm.
Tartare-making workshop at brunch
Learn the art of making tartare from the meat maestro, Dario Cecchini. Participants can craft their own signature tartare using Viñals Soler’s top-quality cuts while savouring a boozy brunch. This hands-on experience promises to be both educational and delicious, with Dario guiding guests to create this timeless dish.
Bottega di Carna tartare-making workshop and brunch happens on 23 November at Mondrian Singapore Duxton from 12pm to 3pm.
Veuve Clicquot RICH and RICH Rosé debuts in Singapore with Sun Club pop-up
Taste the chic French Riviera in Singapore at the Veuve Clicquot Sun Club pop-up. Launched alongside its new RICH cuveé and RICH Rosé that are perfected for enjoyment under the sun with ice, the iconic champagne Maison brings the sunny-themed Sun Club concept as a flagship at +Twelve. The adult-only beachfront location is outfitted with sun club tables and cabana cubes beneath striped parasols, alongside food pairings with the RICH and RICH Rosé.
A beach club along Palawan Beach Sentosa known for its terraced cabanas, personal plunge pools and unparalleled seaside views, +Twelve is also the first to debut the new RICH and RICH Rosé in Singapore. On the main Singapore island, guests can also sip RICH and RICH Rosé at selected partner venues including Lantern (Fullerton Bay Hotel), Canyon Club (Mondrian Duxton Hill) and Mr Stork (Andaz Singapore).

Hotel Indigo Bintan Lagoi Beach pop-up at Lau Pa Sat
Take a short escape from Singapore at the new Hotel Indigo Bintan Lagoi Beach. As a preview, the scenic resort will bring a taste of island living to Singapore with an immersive pop-up at Lau Pa Sat end November. Designed to celebrate Bintan’s rich—yet often overlooked — culture, this experience will transform the atrium at Lau Pa Sat into a vibrant showcase of Bintan’s maritime heritage — complete with interactive displays and games in a tropical setting.
To celebrate the resort’s opening, a special giveaway will take place on 21 November at Lau Pa Sat’s iconic Satay Street, starting at 7pm. Chef Hatch of Hashida Singapore and Chef Rishi Naleendra of Cloudstreet create original art on collaborative project “Tomorrow
For Christmas 2024, two renowned chefs take their creativity beyond the kitchen for a meaningful tangible collaboration. Kenjiro “Hatch” Hashida of Hashida Singapore and Hashida Tokyo, and Rishi Naleendra, the chef-owner behind 2-Michelin-starred Cloudstreet partnered for a project, titled “Tomorrow.
The jointly designed art piece symbolises the fluidity of life, the duality of darkness and light, and the enduring human spirit while centred on mental health awareness and the theme of resilience and hope. The creative process began with a poem penned by Chef Hatch and evolved with Chef Rishi building on Chef Hatch’s vision by drawing from his Sri Lankan roots to add layers of symbolism. The result is a purposeful original artwork featuring Chef Hatch’s jellyfish motif and Chef Rishi’s “Liyawel” art form of flora with the mythical two-headed “Bherunda”.
“Tomorrow” limited edition merchandise, including t-shirts ($40), tote bags ($30), and stickers ($8), are available now online. All net sales proceeds will benefit local non-profit organisation, The Tapestry Project.

Esquina’s 12th-anniversary 12-month 12-course celebratory monthly menu
Contemporary Spanish and Catalan restaurant Esquina marked a significant achievement this year with its 12th year in business. To celebrate this anniversary milestone, Executive Chef Carlos Montobbio will collaborate with 12 esteemed chefs to serve a distinct 12-course menu every month in 2024. From Spanish and Italian to Indian, Japanese, and Korean cuisines, each 12-course menu will blend the distinct culinary style of Chef Carlos’ and his guest chef.
For November 2024, Chef LG Han of Restaurant Labyrinth will showcase his culinary philosophy of appreciating ingredients, and discerning various taste profiles to the collaboration creations. The Michelin-starred Labyrinth spotlights traditional recipes and techniques alongside the passion of local farmers with 80% locally-sourced produce. Since 2017, Labyrinth maintained its one-Michelin star accolade yearly.
