Another establishment joins the growing list of new pizza places opened in Singapore this year. Helmed by the Hong Kong-based Bartender/Entrepreneur Giancarlo Mancino and Singapore-based Master Pizzaiolo Antonio Brancato, ANTO Pizza E Aperitivi offers a ‘slice’ of Italian sophistication via signature pizzas.

The Pignola-born cousins conceived a well-curated compact menu focusing on three main pizza types – in teglia (baking tin), classic and Le Antonio – served with warm Italian-style hospitality. Pizzas prepared in teglia result in a gently puffed version whereby the top and bottom are crisp, with a fluffy middle while Le Antonio showcases the namesake chef-owners creativity through playing textures and flavours.

Must-try dishes: The mozzarella, potatoes and fresh rosemary-featured Rocco (S$24++), and the best-selling Rustica (S$38) – completed with tomato sauce, salsiccia fresca, smoked Scamorza cheese, radicchio, fresh fennel pork sausage, and shredded raw chicory.

Opening hours: Mondays to Saturdays: Lunch – 12pm to 3.30pm (last order 2pm); Dinner – 6pm to 11pm (last order 9.30pm). Closed on Sundays.

Restaurant Labyrinth (new menu)

Restaurant Labyrinth Laksa Siglap credit

A pioneer in Neo-Sin cuisine in Singapore, Labyrinth is celebrating its milestone 10th year with a new innovative course menu that appears familiar but will surprise even the most seasoned taste buds. The multiple award-winning Michelin-starred fine dining restaurant led by Chef Han Li Guang continues to apply ‘New Expression of Singapore Cuisine’ to the history of fast disappearing dishes and reworked into inventive plates.

One example is the ‘Wartime Rojak’, which is based on a recipe Chef Han encountered in a cookbook of 1940s dishes named ‘Wartime Kitchen’. Labyrinth has recreated the dish; retaining its key ingredients and flavour profiles while giving it a contemporary spin with beetroot is presented in two ways together with herbs of shiso, wasabi cress, and sugar snap peas.

Char Kway Teow is another standout. The popular local hawker dish is approached with creativity, replacing traditional flat rice noodles with seabass fish maw. The umami-savoury profile of the dish is completed with elements such as liver sausage, deep-fried lard, a South African abalone with its liver, and a homemade oyster sauce created from the recipe of an industry veteran.

Must-try dishes: Char Kway Teow, Laksa Siglap

Opening hours: Lunch – Fridays to Sundays: 12.00pm to 2:30pm (last order at 1pm); Dinner – 6.30pm to 11pm (last seating at 7:30pm). Wednesdays to Sundays:  Closed on Mondays and Tuesdays.
